Review of Spaghetti by Martelli, Toscana

I cook a lot of pasta, but don't have the time or patience to make my own. This is the finest dried pasta I have ever cooked. My guests always agree. It has a chewiness and ability to hold sauce that is outstanding. Rarely sticks (only if you totally ignore it in the pot.) Worth the effort--far above the best usual store brands.

The Martelli family has produced their artisanal pasta since 1926 in the medioeval town of Lari, near Pisa, in Tuscany. With simple techniques passed down from one generation to the other this pasta, which following the purist attitude of the makers only comes in a few classic shapes, is made utilizing first grade durum wheat flour grown on the family property . The wheat flour is then kneaded with cold water, cut with bronze dies and let dry in the air for 50 hours. This extra long drying process gives the pasta a special porousness perfect for catching pasta sauce. Keep an eye open while this pasta is cooking, you really need to cook it "al dente", to enjoy the fullness of its flavor and texture.

Review of Sheep's Milk Ricotta Cheese Imported from Italy every week 3lb $39.95

I purchased the Sheeps milk ricotta imported from Italy for homemade Canolli's (the recipe was very specific) and it was the hit of the Italian fest party.The ricotta was vey light, smooth, and creamy. I will only use sheep's milk ricotta now when I make my home made canolli's.
There is no comparison between the store bought cows milk to the imported sheep's milk from Italy.Delizioso, Mangiare'.

Review of Manicardi Aged Balsamic Vinegar #12

To be honest, for the price, this is very good Balsamic Vinegar.I know that the price is rather low for quality vinegar and I was a bit leery of that aspect being a firm believer in that you get what you pay for.In this case that old saying just did not apply.As inexpensive as this is, the quality is actually quite high.

I use quite a lot of this stuff in my cooking and a very large number of my salad dressings have this as an ingredient.It would take an extremely sophisticated taste to tell this product from the more expensive vinegars and for everyday cooking I find that this Manicardi #12 more than fits the bill. Frankly, I was rather amazed at what I got for my money here.

Like all Balsamic Vinegars, it takes a bit of experience to know where the cut off point is and where too much is too much...this product is no exception to that rule.A light hand at first is the best policy.

I highly recommend this.You get the tasteyou want, the essence, without having to sell off an expensive piece of jewelry each time you cook or whip a salad into being.
